Tricks & Treats
In our Tricks and Treats program, students will learn how chemistry is involved in the cooking process and how chemical reactions transform our kitchen ingredients into delicious meals and treats. Students will be introduced to acid/base reactions and how the structure of molecules change when heat or cold is applied in baking, cooking or freezing. Students will use acids, bases, catalysts and enzymes to “cook” some treats and learn the tricks of chemistry along the way.
Concept/Standards: Chemical Reactions
Students will be making a cool substance called elephant toothpaste. Using household items such as hydrogen peroxide, dish soap and baker’s yeast, students will create a chemical reaction in a bottle and watch as their creation erupts! In doing this, students will learn how yeast acts as a catalyst in cooking causing foods such as bread to rise. Students will also learn how the yeast interacts with other substances in a chemical reaction to produce something totally new!
Caught in a Pickle
Students will make pickles! Using cucumbers and a brining agent, students will make their own pickling spices and pickle their cucumbers. After one week’s time, students will be able to eat and enjoy their very own pickles. Students will first learn first hand how the pickling process works and how a cucumber is transformed into a pickle using a mixture of salt and water. Students will also learn how the growth of good bacteria helps to pickle and thereby preserve many kinds of vegetables and fruits, not just cucumbers.
Students will be taking oil, an incredibly common cooking liquid that is high in fat, and transforming it into a powder using maltodextrin. Students will learn how maltodextrin, a food additive made from starch, can convert liquid fat molecules into a dried, solid state powder. They will also learn that this, now converted fat, is more easily digestible as a solid starch and can be used to flavor foods much like oil!
